As Michael said, this sounds like the blitter is enabled but since you're
running NVDI then it just can't be. Anyway, make sure that si.cpx isn't
loaded.
Also, you say that you use the same boot sequence with 5.07 as with 4.09.
You don't happen to use any of the old TK4-utilities as well? The
auto-folder should look something like this:
XBOOT (or any other boot-manager)
TK.PRG (I can't remember the exact name)
NVDI
....
....
DRVIN <--
SCC <--
STING <-- If you use any of these they should run last and in this
MINT <-- order.

No other TK-utilities is needed, atleast not with my setup (MiNT/N.AES).
Read the TK-docs for the recommended configuration of the TK-driver. With
your Falcon it should work straight out of the box, perhaps with the
exception of "Videl RAM" (or whatever) which should be set to 14Mb.
I always boot directly with HD-Driver (which has worked fine since 6.30),
but you might want to put it in your auto-folder as well. I can't see any
reason for doing this with TK5 though.
